What an interesting article. I always wondered why the canned cranberry "sauce" was called sauce when it really was "jello". Did this come about because it is a "luxury version" of the old-fashioned cranberry sauce?

It did originate as a "luxury" version. Before refrigeration, aspics (jellied foods) were difficult to make, since chilling the jelly solution was a critical step in creating the solid form. Now jellied foods are considered kitsche, even low class. As a kid I had to eat "green salad", which was basically salad mixed with jello. I mean really, celery, lettuce, green onion and lime jello just shouldn't be mixed. Apologies to my Mom.

I just remembered that my mom's green salad included sliced green olives as well. They looked like disembodied little eyes looking at me, floating in a sea of green.
